When Edward Schwaesdall moved from San Diego to Shakopee in 1986, he noticed Minnestoa didn’t have many Mexican restaurants.
That year, he opened up Pablo’s Mexican’s Restaurant to bring authentic California Mexican food to the Midwest.
The family-owned restaurant is now in its second generation after 32 years with recipes passed down through the family.
“We are very community-orientated as a local business which with our history in Shakopee sets us apart from others in the ethnic food areas,” Schwaesdall said.
Schwaesdall said the restaurant is run by the owners and family members daily. On any night, as many as 12 family members work in kitchen and front of house, adding to the family atmosphere and dynamic of the business, he added.
Other finalists include Billy G’s Food and Beverage, Feed Mill Restaurant, Hazellewood Grill and Tap Room, Houlihan’s, Lions Tap, Maynards, Patron Mexican Bar & Grill, Tavern 4&5 and the Noble Lion.
